Since you are stopping in HK as the last destintion, you enjoy what Hong Kong offer most. Shopping and Dining.
If you want to stay in water resort, Hong Kong is not the best place to offer beaches of long white sandy coast with clear blue sky and ocean wave kind of scene. But maybe you can try Repulse Bay where there is some resort for your choice.
There are few countries you may wish to consider for water resort, Malaysia, Phillippines, Thailand and Indonesia.
Malaysia - Pangkor Laut Resort in Pangkor Island, Laguna Beach Resort in Redand Island, Tioman Island - Berjaya Beach Resort. Or you may travel to Sipadan Island in Sabah for scuba diving. Sipadan is like Maldives.

Thailand - Phuket Island, Krabi, Songkla, Pattaya
Indonesia - Bali Island

Why dont you think about going to the Philippines if you want to enjoy the resorts?
We have 7,100 islands. Most foreigners go here because of our nice islands! Boracay is famous for beach lovers. Palawan is famous for scuba diving! I have been to both and their beauty are different.
Enjoy our Christmas season! We have a long Christmas season starting December 16 to the first Sunday of January. We have 9 days of masses early morning !
Hongkong is more well known for shopping centers. Most Filipinos go there to shop and see Hongkong Disneyland! However, for resorts are they famous too? Philippines is only 3 hours away from Hongkong by plane. Why dont you give it a try and see the internet for our famous resorts now!

i don't think there's a resort in hongkong but am not really sure.. although its composed of islands, it's more of a shopping and business destination.
if you really want to stay in resorts like those in maldives, i agree with sansrival, go to the philippines! it is near hongkong, has worldclass beaches and cheap too! go to palawan and you'll find those water bungalow/villas like those in maldives..
