I used to feel the same way. If she has Discover Card then download "Discover Desktop." Whenever you buy something online Discover Desktop will create a unique number so that that seller cannot add anything to the purchase. The number can be only used for one purchase and they will never see your real number. Check it out at http://www.discover.com

Buying stuff online can be a little scary at first, but the more you do it... the more comfortable you get. Pretty much look for a padlock (or a solid key) in your browser (NOT on the page) before you enter any personal information.
That padlock denotes that the page is encrypted & any data exchanged on the page will only be seen by you & the company you're buying from.
If you're not THAT comfortable with giving your credit card information online, you can go an alternative method... Like buying stuff on eBay with auctions that accept Money Order or ordering a pizza for delivery online.
The alternatives usually have more of paper trail than credit card transactions, but it uses more traditional means. When ordering a pizza online, you don't even have to pay (if using cash or a check) until the pizza arrives.
All the major pizza franchises (Pizza Hut, Domino's, Papa John's) have online ordering system which only requires to enter your home address & phone number for delivery.
Again, start with something simple & build your way up. I know it's not a quick-fix, but it has the highest chance of success.

Tell Mom I do a lot of buying over the internet. I have never liked walking from store to store and, until the internet, was a catalog/telephone shopper.
To buy over the internet, you want to buy from a reputable store, and before giving your credit card number, look for two things:
1. At the lower right of the window, you should see a little padlock.
2. At the same time, in the address bar, where you see the address of the seller, you should see https instead of the usual http. The "s" means it is a secure site.

Common sense is best when ordering online .
Stay with stores your mom knows, bestbuy , dell , newegg etc
Also buying online because services like paypal have made the internet much more safe and enjoyable for both seller and buyer ,
Paypal lets only the bank see your info and transfers the funds
