I think Tobias is the one character I couldn't do without... he is just sooooo oblivious to how very warped he is....
...but the first quote that comes to mind is one of Michael's:

Great Show... Arrested Development and Coupling are my two current dvd addictions.

My favorite Bluth was Gob. Nothing beats him singing with Franklin or when he made Franklin wear the "George W. Bush Hates Black Puppets" T-shirt. Man, that still makes me laugh!
