Wax in plants is generaly used to conserve water, especially if the plant is in a dry location (think desert), it's usually a coating on the outside of the leaf. Wax in ears is used to trap dust and dirt, keeping it from the eardrum. Beeswax is used to build honeycombs. There's a lot of uses out there, and it really all depends on what specific type you're looking for.

Waxes provide structure and also make plants less desirable for consumption. Waxes are also used to protect plants from evapotranspiration during the middle of the day, thus conserving water.
