I don't think there's much you can do. Unfortunately, out of the casino, the chips don't mean anything. You can either hold on to it until the next tim you go back (providing they don't change their chips. I'm not sure what kind of policy they have on old chips.) or you can give it to a friend who is going to be going there soon.
Or maybe keep it as a souvenir. My brother likes to college poker chips. They tell you the name of the casino, and each casino uses different chips, so it's kind of neat to see all the different ones.

You can save it and plan to go back again. Write the Casino that it is from, and ask how to redeem it. Keep it as a souvenir, if it isn't worth that much. Look up a church in Vegas, and send it to them.

One of the catholic churches has a special saturday mass for the gamblers. Alot of the gamblers put chips in the collection plate. The one closer to the Hilton. You could mail it to them. They have someone who goes and exchanges the chips in. You could send it to them in the mail and donate and feel good about it.
It was in my vegas guide about this. I may have info if you are interested.

It is against Federal Law for anyone to accept these chips as legal tender, except in a gaming establishment.

Use it as an excuse to go back! Or you can give it to someone (you know and trust) who is going and will either gamble it for you and agree to split the winnings (if any) or they can cash it in for you. Last resort...sell it on ebay!
