How about one on the uses of black lights, which can detect trace amounts of certain substances? (Which include urine and semen...I read a hair-raising article online a few months ago, about what you can find in even "nice" hotel rooms by shining a black light on the linens and furnishings.)
Or one on fingerprinting? You could find out about the techniques that police and forensic scientists use to detect fingerprints and the techniques that criminals use to remove them.

They say boiling water freezes faster than cold tap water. This has been observed many times, but I don't know that it's ever been explained. You could google it and see if somebody explains it. But the project could involve freezing tap water starting at different temperatures, and water that has been boiled, both at boiling point and cooled to different temperatures first. It could be that expelling the gases promotes crystallization.
