Can you hold an undergraduate degree in a subject (in my case, it will be theatre) and still go on to teach it, or do you have to already have your teacher certification? (There are few schools that offer theatre education as a degree, but most colleges have a drama department.)

Yes. For example, I have an English degree with no education coursework, and I can still teach English. In FL, you just have to take a test and get certified to teach in your field. Of course, each state will have different requirements.

Every state has different rules on this (as do international jurisdictions). Many states do allow people without formal certification to teach, though you will likely have to take courses in education while you are teaching. Programs like this are especially popular in subjects that legislators consider "non-academic" like theatre. Some states, however, require that only people who hold a teaching degree can teach in schools in their state. You'd be wisest to go to the Department of Education website for the place you want to teach and look for topics like "alternative certification".
