This is because if you lose 4000 species each year, then each year there will be 4000 LESS (subtraction) species on earth the next year. So, you subtract the 4000 species that were lost in the past year from S (the # of species that there were in the begginning of the last year).

Ok, just think of S as if it were a number.
If you had "s" number of jelly beans and you lose 5 every year, how you would figure out how many you had this year? Just think about it that way.
