identify your target market and find out what they like (exotic fish, clean place, etc). also determine what they are willing to pay. you will then need lots of advertising to drive customers into your restaurant.
remember that the margins are made in alcohol. try to have your employees getting the customers to buy drinks, etc.
also, it is critical to control your inventory. spoilage will hurt so don't buy too much. if you need to, give your customers some larger sushi portions to avoid throwing away good fish. they will most likely come back and/or tell their friends about your place.

My husband and I used to have a favorite Sushi restaurant. They used great quality ingredients and they used real crab in their sushi rolls, not that minced up stuff. We used to go there almost once a week.
Then a couple months ago they switched management. Now they use the minced up crab stuff and the quality of the food just isn't as good.
To me, the quality of ingredients is key for a Sushi restaurant.

Above all else, employ people with great customer service skills. Even if your product is the best in the whole wide world, your business will fail unless you treat your customers well. Word-of-mouth is the best advertisement!

The same way the japanese do. Serve lots of alcohol and have prostitutes available at the bar.
