No, 2 x 512MB RAM modules are better than 1 x 1GB RAM module. Please take a look at this article from PC World Magazine.
"Ask Our Experts: Memory--Seeing Double
Do two smaller memory modules offer better bandwidth than one large one?" -- Liane Cassavoy, PC World.com
I have a motherboard that supports PC2100 DDR RAM. Should I use two memory slots for optimum bandwidth instead of a single slot? Will two 256MB memory modules perform better than a single 512MB module?
Hong Ng, Singapore
Associate Editor Liane Cassavoy responds: In short, yes to both. If your motherboard supports dual-channel memory, installing two identical modules should improve computer performance by 10 to 15 percent, according to Mike Sanor, technical support manager at memory manufacturer Crucial Technology. While systems also work with a single memory module, installing modules in identical pairs boosts performance, because it gives each module its own pathway to the memory controller, doubling the peak data bandwidth. (Consult your computer's manual to determine which two sockets on your motherboard support dual-channel memory.) Sanor also says that manufacturers are phasing out PC2100 DDR, but the more widely available PC2700 DDR is backward-compatible.

not always better. More times than not the 2 x 512MB sticks are better if your motherboard and processor have a good memory controller and support Dual Channel (most do nowadays). The reason behind this is that the integrated chips on on the 2 sticks compared to the single, larger capacity stick are made a little differently and usually have better, tighter, more reliable timings.

No 1 1GB stick is not better than 2 512s. 2 512s will be better if your motherboard can run in dual channel mode, else, the two setups will perform the same.

The 2X 512mb would have more bandwidth if its in dual channel...but if it's not dual channel, the single 1gb is faster and 2x1gb is faster than 2 x512mb in dual channel
