Oxalic acid, nowadays called ethanedioic acid, is found in rhubarb leaves, is toxic, and has the formula (COOH)2. Oxalates, or ethandioates, are salts of this acid and are also toxic.
Rhubarb stems are quite safe to eat, unlike the leaves!
