If the degrees are from the same college, there's often literally no difference. If they're from different schools, you'll almost certainly have to fulfill duplicate (and slightly different) general education requirements for a double degree. What may make your decision is if the college allows you to double major in these extremely different fields. If they don't (for example because one is a BFA and the other a BA), you'll have no choice but to get multiple degrees.

And when you get two separate degrees, one at one time and one at another, the granting school usually honors the gen ed requirements from the previous school.

I would worry about getting through undergrad before I worried about law school. Law school is killing me right now.
