freeze the water and pour off the oil or just pick out the ice...

You can use a centrifuge to pull them apart as much as possible. A pretty cool thing I saw in chem class once was milk after it had been ran thru a centrifuge and you could see all of the fat that was in the milk.

they always remain separated... if u mix oil and water, the oil will float on top of the water...

They dont mix in the first place!!!!! Just syphon off the oil!
