You start off fighting Gergoth with Yoko, equipped with her Holy Lightning. At the beginning of the fight, hit Gergoth with the Holy Lightning, then duck underneath him when he bites at you, standing away from him. When he lets out the poison cloud or the stone cloud, immediately release the Holy Lightning to beat it back, duck under Gergoth, kick him repeatedly, then when he jumps, run underneath him and hit him with the staff repeatedly.
After the floor breaks through and both you and Gergoth fall, switch to Alucard, so you can superjump and avoid most of Gergoth's attacks, then finish off Gergoth with him.
