Apparently, in many parts of the country they can and do.
The laws that govern this are state laws... but most employers do whatever they deem in their own best interest, knowing that courts will usually side with them over employees.

They have to post a sign saying that the area is being monitored by cameras. They cant use them in locker or rest rooms.

It depends on where the employer is videotaping. If it is in a bathroom, locker room or any place where reasonable privacy is expected, that is illegal. Other than that, they can tape where they want.

They can it is their property you work on. However they can't tape private things (like restroom stalls.) They do this for many reasons, mostly to look for screw offs, but security is the reason they usually give.

O.K. ...... "Anyone" recording audio or video ( conducting audio or video surveillance ) MUST, display signage in plain sight of ANY person entering any room or any building that uses such security measures.
