Why would I want to use one or the other? Is sizing better for your fabrics in the long-run?

I prefer starch. Sizing doesn't hold a crease as long, in my opinion.

Also, I have used both and haven't noticed a difference in the wear or color of my clothes.

I believe in using starch. Not sure about sizing being better for the fabrics!

Starch is one of the component of sizing, so sizing is much better than starching, if that mixture made carefully for a particular fabric.
