I have been told that if I put my mind to it I can do it or acheive it.

Are they saying that just to be polite or do they know something I don't realize?

And why do people tell me I'll be married before I know it(out of the blue without me asking) when there are a lot of people who never been married? Are they just being polite?

What the mind can perceive it can achieve, the first step to accomplishing anything is realizing that you can if you want it bad enough.
As for the marriage, maybe they are complementing you, saying that you are such a terrific person and so nice that they know that you will find "the one" soon. If you don't want to marry, ignore them, if you do, then keep hope and keep looking.

Here's an example: When aiming at a target with a bow and arrow, presuming you have been well trained in same, that moment before you release the arrow (when your eyes are squinted, and you are picturing the bullseye) is the defining moment; you will hit or miss, dependent mostly on how you think you will do. Most skills are instinct, and once doubt creeps into the mind, then instinct is usurped and infected with the doubt. Most people have had an eery feeling when the phone rings, and without picking it up (or seeing Caller ID), they know who's calling. Most people see an invention and think they thought of that idea years before. My theory is that thought, like all energy, can not be destroyed and thus passes from person to person. If you know you can do something, have done it a thousand times before, then you will be successful at that. Mind over matter truly exists.
