The sous chef in my restaurant is a bit of a freak, since he always check our hats and hairnets and he'd go mad when he sees a strand of hair hanging about...
However, it makes sense though. It's better than getting few complaints from customers for finding a single hair floating on their soup ;)
It also makes you feel more professional and motivated, once you dress up perfectly as a kitchen brigade!

i work in beef export and hair nets and have to wear hair nets there to keep your hair of other peaple,s food so yes all your hair needs to be covred
