Does anyone else believe that "I love you" is said too much nowadays and isn't enough and/or doesn't mean as much when said? It seems like it's just carelessy thrown around and that there's no real meaning behind it anymore.

I love you is never said too much if you mean it each time you say it! It is the best thing you can ever say to someone who needs to hear it or it needs to be reinforced a lot with! Just remember people's feelings are fragile and never say anything you don't mean

No. If sincere, it cannot be said too much and Yes it can be expressed nonverbally. I'm not big on a bunch of mushy meaningless drivel; BUT

I regret not telling my late father that I love him more than I did.

I'll not make that mistake with my mother if I can help it.

Affection which comes from the heart is not a character defect; but it sometimes becomes a bit unnerving at times. I try to grin and bear it when I know it comes from the heart.

Unfortunatelly nowadays people shamelessly use this expression with any meanings. It often means "I want you" nowadays. It is much better to judge by the person's acts towards you than by his or her words. I could say I love you to a dog on the street and it would not mean anything.

It is NOT said too much if you mean it, but just saying it just to say it, and to say it because you think that a person wants to hear it can be a bit much.
Don't say it unless you mean it!!!
