You've probably never heard it but I would have to say 'Electricity' by Captain Beefheart from the 'Safe As Milk' album (1967). If I was to pick one you may have heard, it would be 'Unfinished Sympathy' by Massive Attack.

Ain't no mountain high enough by Marvin Gaye and Tammi Terrell
It is the most uplifting song I have ever heard. I have many other songs that I love but that song was the first to spring to my head.

changes depending on my mood, but love jeff buckleys version of hallelujah, nina simones feeling good, rage against the machines killing in the name of, and metallicas master of puppets... (sorry, cant name a favourite, so had to give you 4!)

Ah, so much good music and you are asking for just one tune?
That is truly a difficult question.
If there is just one popular song that I would be limited to hear, for eternity, it would probably be...."The Pretender", by Jackson Browne.
