Because we are so bored with are own pointless lives we think that everybody else's lives are more interesting than ours. It's mainly a British trait.
We are also unprepared for the hard work that relationships take so we look for an easy way out.

Basically when you look at the grass under your feet you look down vertically and can thus see the gaps and the weeds and the stones etc between the blades of grass which are of course not green giving the overall impression of a less green surface. Conversely when you look from afar you see only the blades of grass giving a much greener overall appearance.
When used as a saying the same is true in that we see all the problems that we have making ourselves look less lush compared to other people who when view from afar appear to have less problems than us. Alas like the stone in the grass they probably have just as many problems as we do.

Because we long to understand and experience the duality of the world we live in.......This answer is on a deeper level...I will rise to the surface in my summation
In order to fully understand love one must experience hate and disgust. In order to understand the purpose of money one must experience being poor. In order to experience the value of the family one must experience a lack thereof. So we are attracted like flies to a buglight to the opposite of what we are experiencing....IF what we are experiencing we do not truly and fully appreciate and understand. If that is the case the human spirit always "wants more"
In addition, many times we are at a certain job and we long to be somewhere else...perhaps working for the competition? We think everything will be great on the other side b/c all that is presented from the other side is the GOOD stuff...not realizing the bad stuff exists as well once we get there.....Then we realize when we make the switch that its the same bowl of crap with a slightly different flavor. The point of this is to show us that its not where we are in as physical sense..(job, city we reside, marriage we are in) It where we are in a mental sense in our state of mind....Get that sorted out and you will understand the Grass is all the same color everywhere....its our hunger for experience as a human spirit that shadows it differently

Because we as people are never happy with what we have..Just as you think you know what you want and you get it you see door number 2 and want it instead....It's the never being satisfied always wanting more thing...Think about how you wanted your life to be...Did you get it?? Did you then change/want something else?? If so why?? Then you have the answer to your question..
