Hermetic compressor- Completely sealed, especially against the escape or entry of air. Impervious to outside interference or influence. These type of compressors are typically known as "tin cans". There are no user serviceable parts inside. Once this compressor fails, your only option is to replace. These are typically for indoor use because they do not fare well in major temperature swings.
Semi- hermetic- Partially sealed unit. This will look like a car motor for lack of better words. Instead of looking like a tin can, this one can be user serviceable, and rebuilt. Typically it is valve plates that wear out or else break. These are the units you want to uitilize for "real" refrigeration work. These are rated for either indoor or outdoor use and are the best option for extremes. (-10 and below)
Open-This compressor is driven by an external source. Compressor utilizes some sort of sheave and belt / chain combo to turn.
Pinch off tube- Is the access point for which various procedures can be performed at the factory. The factory can add oil, evacuate, charge, pressure test, etc. Once procedure is performed and passed, tube is pinched off.

A hermetic system would have the motor and the compressor all in one unit like on you refrigerator. The pinch off tube is used for charging the system, a device fits over the tube while charging and then you have a pinch off tool that closes the tube below the charging tool, you then take off the charging tool, pinch the end of the tube and silever solder the end. The only thing I can think of for an open compressor is a very big one where the connecting rod would be exposed. A semi hermetic the compressor would be exposed and driven my an external motor. I have also seen very small open compressors like the oil less that are used in cheap air compressors. But when you mention pinch off and hermetic it makes me think that you are talking about refrigeration systems.

an open compressor is one that is shorted out .it means that there is a open in the comp. windings
