i have been on plenty of local and long haul flights, and i have never seen an attendant in stilettos while on duty. They may arrive wearing them but once actually working they change into something low heeled and much more practical to work in.
I'm not sure if there is a max or min requirement regarding heels but I'm assuming it should be a heel that is conducive to safety and practicality. They have a compartment above the last seats that is generally left empty for the staffs items so that's where they put their change of shoes etc.

Each airline has their own standard uniform restrictions and requirement. Depends on how high the heel etc. But stillettoes, no.

I know that they wear them but must remove in emergency, take off and landing. The high is not specified but sure there are social limits for aircraft.

No high heels have been band!
There is only one type of shoe that can be worn. Click below to see them!
