when you can pull the green leaves out from the top of the pinapple easily it should be perfectly ripe then

If you asked the pineapple, probably never. Have you ever heard a lettuce scream? Plants have feelings too.
When you pluck a leaf from the crown it should come away easily.

When you can pull one of the green stems from the top without having to pull hard.
They usually look more golden than yellow too.
