Buy the dough and a good marinara sauce and then make this - Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

Homemade Pizza Dough
1 pkg. active dry yeast
1 cup warm water (105 to 115 degrees)
1 tsp. sugar
1 tsp. salt
2 Tbs. oil
2-1/2 cups flour
Dissolve yeast in warm water. Stir in remaining dough ingredients.
Beat vigorously, about 20 strokes. Cover bowl, allow dough to rest about 15 minutes, or until you have prepared sauce.
SAUCE:
1/2 cup chopped onion
8 oz. can tomato sauce
1/4 tsp. salt
1-1/8 tsp. bottled garlic, or more to taste
1/8 tsp. white pepper
Mix sauce ingredients, set aside. Heat oven to 425. Divide dough in half. On lightly greased 12" pizza pans sprinkled with a light
coating of corn meal, pat each half of dough out into a 10 to 12
inch circle on pizza pans. Divide sauce evenly between to pizza
crusts and spread out. Add whatever toppings you want and then back at 425 for 20-25 minutes on the lower rack of your oven.

INGREDIENTS:
1 envelope active dry yeast
1 cup warm water
1/2 teaspoon sugar
3 1/2 cups all-purpose flour
1 teaspoon salt
PREPARATION:
Put warm water in a cup; sprinkle yeast over water and stir in sugar. Let yeast stand for about 10 minutes, or until it begins to bubble.
Sift flour and salt into a large bowl; pour in yeast mixture and beat until a stiff dough is formed.
Turn dough out onto a floured surface; knead about 5 minutes, or until smooth and elastic. Add extra flour as necessary to keep from sticking to hands and board.
Place in a large bowl greased with shortening; turn dough over to coat the other side with shortening. Cover with towel; let rise in a warm place, away from drafts, for about 30 minutes. Dough will be double in bulk. Punch dough down and divide in half. Grease two 14-inch pizza pans and grease hands lightly. Place half the dough in each pan and stretch to fit bottom and up sides of pan. Keep dough slightly thick around the edges. Fill with favorite filling and toppings and bake according to pizza recipe directions, or about 15 to 20 minutes at 425°.
pizza sauce:
1 clove garlic, mashed and minced
1 teaspoon salt
1 can (6 ounces) tomato paste
1 can (8 ounces) tomato sauce
1/2 teaspoon sugar
1/8 teaspoon pepper
1/2 teaspoon oregano
1 tablespoon olive oil
dash red pepper, optional
PREPARATION:
Combine all ingredients. Makes about 1 1/2 cups, enough for 2 pizzas.
pizza recipe:
Pepperoni Polenta Pizza
INGREDIENTS
1/2 cup dry polenta
2 1/4 cups water
1/2 teaspoon salt
2 teaspoons olive oil
1/2 cup thinly sliced onion
1/4 cup diced green bell pepper
1/2 cup marinara sauce
10 slices reduced fat pepperoni
1/3 cup diced tomato
1/4 teaspoon dried oregano
1 pinch salt and pepper to taste
1/2 cup shredded part-skim mozzarella cheese
DIRECTIONS
Place the polenta, water and salt in a saucepan, and bring to a boil. Cook, stirring constantly for 3 to 5 minutes, until thick. Pour into a pie plate or shallow baking dish. Cover with plastic wrap, and refrigerate until chilled.
Preheat the oven to 450 degrees F (220 degrees C). Heat oil in a skillet over medium heat. Add the onion and bell pepper, and cook, stirring until onion is soft. Set aside.
Spread the marinara sauce over the chilled polenta 'crust'. Top with the onion and pepper mixture, pepperoni, tomato and oregano. Season lightly with salt and pepper.
Bake for 10 minutes in the preheated oven. Sprinkle cheese over the top, and continue to bake for an additional 2 to 3 minutes, until cheese is melted. Cut into 6 wedges, and serve hot.
