Want to use wired headsets from a TV that has muliple outputs for sound including surround sound. Need component recommendation and hookup guidance

I agree with the second answer. Althought the first answer sounds informative, it demonstrates a lack of knowledge regarding RCA outputs.
The RCA audio output (otherwise known as base-band or line-level outputs) never do have a volume control because they are designed to send a low-level electrical signal between audio components, too low to power even the speaker coils on a set of earphones. For this reason, simply adapting the 1/8" stereo plug from a set of earphones to connect into dual-RCA outputs would yield little or no sound and adding an in-line volume control would only attenuate the signal even further.
This signal must first be fed into a stereo amplifier which would in turn would power the output to speakers or a headphone jack with a variable volume control.

Simplest way would be to take the stereo analog outputs (RCA jacks) and use a Y-adapter that goes from RCA plugs to a 1/8" or 1/4" stereo jack (depending on what your headphone's plug is). If there's no volume control on the external audio outputs, you might also consider a volume control attachment along that connection. You can find this sort of stuff at your local Radio Shack.

Ideally, though, you should hook your TV up to an audio receiver that has a headphone jack.

Run the TV through your stero, then hook up your hphones.
