The meat is taken from the less desirable muscle cuts, those too tough to make into decent steaks, roasts, etc. The amount of fat varies. The higher the fat content, the "richer" the taste. Diet conscious customers are demanding a leaner ground beef only the leaner cuts are ground and no extra fat is added. Alas, the leaner the ground beef, the drier the meat and less flavor.
The nonmuscle parts are not used in ground beef. Organ meat may be sold as such; liver, heart, kidney, tripe, etc. The other stuff we don't like to think about is processed into other animal feed or other protein based products.
If you are unsure about ground beef, buy the meat or roast and have the butcher grind it for you.......at one time that was a quite common request. Now you may have to go to a specialty meat market.

I work in a meat dept. of a grocery store so I can give you a pretty accurate desciption. Ground beef comprises of the scrapes of meat cut off of steaks and roasts. the scrapes of meat and excess fat are put in a meat grinder and ground up. the end result is what you buy in the meat counter.

THERE ARE IN AFFECT NOW STRICT LAWS
GOVERNING THE PRODUCTION OF SUCH PRODUCTS

comes from all kinds of sources. don't believe what your butcher tells you! I refuse to eat ground beef.

mince is bits of hoof, intestine, blood, cartilage, testicles, bone, sinew, gristle and some (meat, cow maybe) all served up on a sesame seed bun. Want genetically modified potatoe fried in meat fat with that. or a pig fat based thickshake or cone for dessert. also a 1/4 cup of pure sugar with soda water to wash it down
