Can you help me name some of the standards used when networking and cabling an office building (e.i t568b, IEEE STandards... etc.. Im not so sure which ones.

It is Category N (or Cat for short, N be 1 to 6) for Ethernet cable. RJ-45

If you go ages back you will find Coaxial/Thinnet and Thicknet wiring but they are obsolete. There are also wirings using phone RJ-11 for networking, they are for really old Apple II/old Mac setups.
