Patrami is a highly seasoned beef made from a cut of plate, brisket or round. After the fat is trimmed, the meat's surface is rubbed with salt and a seasoning paste that can include garlic, ground peppercorns, cinnamon, red pepper, cloves, allspice and coriander seeds. The meat is dry-cured, smoked and cooked.


Genoa salami is a variety of dry cured Italian sausage originating in the area of Genoa. It is normally made from pork but may also contain beef, and is seasoned with garlic, salt, black and white peppercorns and red wine. Like many Italian sausages, it has a characteristic fermented flavor.

In the United States, sliced Genoa salami is a staple of the "Italian Combo" submarine sandwich.

I think pastrami is from lean beef so the fat content is heaps less. I think salami is at least 40 or 50 percent fat.

salami is made of ground pork meat and fat
pastrami is made from smoked beef and can also be made from corn-beef

Pastrami is pepper flavored corned beef.

Salami is a large ready-to-eat sausage similar to Bologna -- a little harder and spicier.

Both are usually kosher so neither contains PORK.
