i saw someone mentioned lunges, which are definitely great. another exercise we would do in the army were called 'dirty dogs'.

get down on all fours and alternately raise each leg laterally with the knee still bent. it'll look like a dog lifting its leg to take a pee, hence the name. you should get a pretty good burn in the butt after some reps.
