I am looking for a quick & easy recipe that is healthy for tortillas.

I dont think so. The lard is what keeps the flours consistency. Tortillas are fattening deal with it

I use canola oil when I make my tortillas, so I don't see why olive oil would be different. I'm not latino whatsoever, but homemade tortillas are the best ever, I've been making my own for years. The taste might be a little different, but how can they be bad??

yes u can!! my mother uses shortning and my mother in law uses oil i think the taste is better with shortening
