how come, when you order any chicken dish from a chinese restaraunt, it is not like any chicken anywhere else, grocery store, any other restaraunt. different weight, different consistancy, different taste. how is it prepared so the outcome is unlike any other?

it might not be chicken??? lol!!! the health dept where I live closed one Chinese restaurant down for killing cats and dogs. really!!!!!!

Three years living in China and I have never seen a chicken boiled. There are a dozen ways that they cook chicken here so it depends on the restaurant. Where is this restaurant? If it is in the U.S., it may be run by Guangdong immigrants (southern China) who use sweeteners in almost all sauces. Marinade? I doubt it. Chicken is injected with water in the packing process so it is already marinated in a bad way.

A common way to cook chicken in a restaurant here in China is to whack the whole thing into bite size chunks with a cleaver and stir fry it. This produces a lot of bone fragments but they don't mind it a bit.

There are only two dishes I have seen with boneless chicken. That would be "Qin jioa ji din" which is "green chili chicken cubes" and the ubiquitous peanuts with chicken cubes that almost all westerners love but don't eat much of the peanuts. The green chili dish is northern China so it is not sweet.

I think the secret is in the marinade. sesame and five spice powder are used a lot!! Also, chinese chicken is dunked in boiling water and reboiled.. and heat turned off and left to slow cook. this results in its unusual consistency!!

well one time in LA me n my mom ordered some Chinese chicken then i saw this old when i say old i mean old lady she was making it with her hands and it was all slimy when she was holding it it liked disgusting
