In simple terms, eating crow means swallowing your pride

Years ago if someone spoke badly of a community leader behind his or her back and was then discovered to be doing this, they were banished from the community, and it was said that these people"ate crow" in the wilderness merely to survive until they came upon another community willing to welcome them in. The meaning changed a little as it was passed down through the generations but the basic idea is still the same.

It's like if someone says something and then later finds out what he/she said was totally wrong, they have to "eat crow" or admit they were wrong.

to eat his words.. where they are usually embarassed for a comment they may have made earlier..
"I thought redskins were gonna beat the colts, boy was i eating crow later"
