Beef Fajitas

1 (1½ to 2 pounds) beef flank steak
1 (16-ounce) jar Salsa
1/4 cup Worcestershire sauce
2 tablespoons lime juice
1 tablespoon vegetable oil
2 teaspoons firmly packed brown sugar
2 cloves garlic, minced
2 large onions, cut into ½-inch slices
1 small green bell pepper, quartered
1 small red bell pepper, quartered
Warm flour tortillas (7-inch)
Refried Beans
Guacamole
Fresh cilantro leaves

1. Place steak in shallow glass baking dish. In small bowl, combine salsa, Worcestershire sauce, lime juice, oil, brown sugar and garlic. Mix well. Pour over steak.

2. Cover; refrigerate at least 4 hours or overnight, turning occasionally.

3. Remove steak from salsa mixture; reserve mixture. Over medium-hot coals, grill steak, onions and peppers 10 minutes for medium-rare doneness and until vegetables are tender and lightly charred, turning occasionally.

4. In small saucepan, bring salsa mixture to a boil; boil 2 minutes. Set aside. Thinly slice steak diagonally across grain. Cut peppers into strips. Serve steak, peppers and onions wrapped in warm tortillas with salsa mixture, beans, guacamole and cilantro.

The trick to good steak fajitas is that you don't cut the steak into strips until AFTER you cook it.

Start with flank steak and marinade overnight (there are a ton of good fajita marinades...check out www.epicurious.com). Grill the meat before you cook the accompanying veggies. Cook slightly rarer than you want it and let it rest on a cutting board while you grill the veggies.

The meat will continue to cook a little and will cut much better when it has had a chance to rest. Cut it thinly on the bias (diagonally) with a good sharp knife.

Now I'm going to have fajitas for dinner! Good luck.

flank steak works the best, but any kind will do. You want to slice it thin and season it. Prepackaged taco and chili seasoning will work well. Heat a skillet with some oil, add 1 onion and 1 green bell pepper ( sliced thin) and heat until cooked, remove veggies, add the meat and cook, stiring constantly, Season whil cooking, when the meat's almost cooked to your taste, then add back the pepper and onions, ( i use more then 1 since they cook down and i like the veggies)
squeeze 1/2 a lime over this and serve with warm tortillas, rice, sour cream and refried beans
You can also marinate the meat in italian dressing, but drain it well ( not my fav but alot like it)

I worked in the most popular fajita restraunt in Texas for 2 days,lol but I learned their marinade...pineapple juice and soy sauce,sounds crazy but beyond delicious! so soft and juicy too...

I just use sirlon steak and cut into strips and marinade in some taco seasoning and bit of olive oil

use pre sliced beef like steak or what ever is pre done and stir it with the veggetables and onions

try slicing it fairly thin and marinating it in italian dressing for a few hours, then cook it on a grill in foil

just buy the prepackaged ones........its a little bit more maybe like .50cents to a dollar a pound or so...............good luck..........
