INGREDIENTS
2 cups white sugar
1 1/2 cups corn syrup
2 cups heavy cream
1 cup butter
1 teaspoon vanilla extract
DIRECTIONS
Butter a 9x13 inch dish.
In a heavy saucepan, combine sugar, corn syrup, 1 cup cream and butter. Bring to a boil, stirring often, then stir in remaining 1 cup cream. Heat, without stirring, to 242 degrees F (116 degrees C), or until a small amount of syrup dropped into cold water forms a firm but pliable ball. Remove from heat, stir in vanilla, and pour into prepared dish. Refrigerate.
When cool, return candies to room temperature then cut into 1 inch squares and wrap in waxed paper.

If you want to make caramel like the square candy use this recipe:
INGREDIENTS
1 cup butter or margarine
1 pound light brown sugar
1 (14 ounce) can sweetened condensed milk
1 cup light corn syrup
1 pinch salt
1 1/2 teaspoons vanilla extract
DIRECTIONS
In a heavy bottomed saucepan over medium heat, combine the butter, brown sugar, sweetened condensed milk, corn syrup and salt. Bring to a boil, stirring constantly. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Cook for 2 minutes at that temperature.
Meanwhile, butter a 9x13 inch baking pan. When the caramel is ready, pour into the buttered pan. Allow to cool completely at room temperature. Remove from the pan and cut into squares using scissors. Wrap individual pieces in waxed paper or cellophane.

The best caramel gets its sweetness and rich color from the brown sugar in the recipe.

"Caramels" - 81 pieces

2 cups sugar
2 cups light corn syrup
1 (14 oz.) can sweetened condensed milk
1/2 cup butter or margarine
2 tbsp. vanilla extract

1) Butter 9x9" baking pan. In heavy, 3-quart saucepan, combine sugar, corn syrup, milk and butter. Over medium heat, heat to boiling, stirring until sugar is dissolved. Set candy thermometer in place; continue cooking, stirring occasionally, until temperature reaches 248* or until a small amount of mixture dropped into very cold water forms a firm ball that does not flatten on removal from water.
2) Remove from heat; stir in vanilla. Pour into prepared pan.
3) Cool in pan on wire rack; cut into squares. Wrap each caramel in plastic wrap. Yields 3 lbs.

Get some sweetened condensed milk. It comes in little cans. Put a small hole in the top. Place the can in a saucepan of water the water should be about 1 inch lower than the top of the can. Boil the water for an hour or so.

Heat granulated sugar on the stove top. Just add a little bit of water. Just watched it done on TLC's 'Take Home Chef'.
