CHERRY CHEESECAKE

CRUST:

1-cup graham cracker crumbs
3 tablespoons sugar
1/4-cup butter, melted

CHEESECAKE:

24 ounces cream cheese, softened
3/4-cup sugar
1-teaspoon vanilla extract
3 eggs
16 ounces cherry pie filling, chilled

Combine crumbs, sugar, and butter; press onto bottom of 9-inch springform pan.
Bake at 350 F, 10 minutes.

Combine cream cheese, sugar and vanilla, mixing at medium speed
on electric mixer until well blended. Add eggs, one at a time, mixing
well after each addition. Bake at 450 F, 10 minutes.
Reduce oven temperature to 250 F; continue baking for 30-40 minutes.
Loosen cake from rim of pan.

Chill. Spread cherry pie filling over cheesecake before serving

1 1/2 cups Graham crackers finely ground (or cookies such as chocolate or vanilla wafers or 3 tablespoons All purpose flour
5 tablespoons Unsalted butter melted Finely grated zest of 1 orange
1/3 cup Sugar Finely grated zest of 1 lemon
1/4 teaspoon Salt 5 large Eggs
-- CHEESECAKE -- 2 large Egg yolks
5 8-oz packages Cream cheese softened 1/2 teaspoon Vanilla


Instructions
CRUMB CRUST
Makes enough for a 24-centimeter cheesecake. Active time: 10 minutes. Start to finish: 10 minutes.
Stir together crust ingredients and press onto bottom and 1 inch up side of a buttered 24-centimeter springform pan. Fill right away or chill up to 2 hours.

CHEESECAKE
Make crumb crust as directed above. Preheat oven to 500 degrees.

Beat together cream cheese, sugar, flour, and zests with an electric mixer until smooth. Add eggs and yolks, one at a time, then vanilla, beating on low speed until each ingredient is incorporated and scraping down bowl between additions.

Put springform pan with crust in a shallow baking pan. Pour filling into crust (springform pan will be completely full) and bake in baking pan (to catch drips) in middle of oven 12 minutes or until puffed. Reduce temperatur to 200 degrees and continue baking until cake is mostly firm (center will be slightly wobbly when pan is gently shaken), about 2 hours more. Don't open the open door during baking!

Run a knife around top edge of cake to loosen and cool completely in springform pan on a rack. Chill cake, loosely covered, at least 6 hours. Remove side of pan and transfer cake to a plate. Bring to room temperature before serving.

Cheese Cake

1 Graham Cracker Pie Crust
1 8 oz. pkg.cream cheese softened
1 14 oz. can sweetened condensed milk (not evaporated milk)
1/3 cup lemon juice, fresh or bottled
1 tsp.vanilla
1 21 oz. can cherry pie filling
Let cream cheese stand at room temperature until softened. Beat cream cheese until light and fluffy, slowly adding milk until smooth. Stir in lemon juice and vanilla. Pour into crust. Chill 3 hrs. until firm and then top with cherry pie filling.
Makes 1 pie.

OLGA's CHEESECAKE:
Graham cracker crumbs
1 lb. small curd cream-style cottage cheese(use as dry a cream-style variety as possible)
2 (8 ounces) packages cream cheese, softened
1 1/2 cups sugar4 eggs, slightly beaten
1/3 cup Argo cornstarch
2 Tablespoons lemon juice
1/2 cup margarine, melted
1 (16 ounces) pint sour cream
Grease 1 (9-inch) spring form pan; dust with graham cracker crumbs. Preheat oven to 325 degrees. Sieve cottage cheese into large mixing bowl. Add cream cheese. Beat with high speed of electric mixer until well blended and creamy. Beating at high speed, blend in sugar, then eggs. Reduce speed to low. Add cornstarch, lemon juice and vanilla. Beat until blended. Add melted margarine and sour cream. Blend with low speed. Pour into prepared pan. Bake in 325 degrees (slow) oven about 1 hour and 10 minutes or until firm around edges. Turn off oven.Let cake stand in oven 2 hours. Remove and cool completely on wire rack. Chill. Remove sides of pan. Makes about 12 servings.

I make mine with just a couple things of cream cheese, a fourth cup of powdered sugar and just a little milk to make it creamy. Mix it all well and spoon into a grahm cracker crust. Good stuff, I like cherries on mine.

SOPAPILLA CHEESECAKE! it's quick, easy, and you can find it on the internet. i dont have the recipe with me but i know it includes lots of butter, sugar, cinnamon, philidelphia cream cheese, vanilla, and pillsbury croissant rolls as the crust. not sure about all the measurements but i know you layer one can of croissant rolls on the bottom of the pan, then pour the mixture of cream cheese, sugar, butter, and vanilla extract on top. add another layer of croissant rolls on top of that as the crust and then pour a mixture of the leftover butter, sugar, and cinnamon on top of that. bake for about 30-40 minutes and your done. IT'S DELICIOUS and all the ingredients costs less than 20-25 bucks at walmart. ENJOY!!!

try
2 bars of philadelphia cream cheese
1 container of cool whip
2 cups of sugar
blend all together and put into
premade graham cracker crust
leave in fridge for 4 hours
then serve with cherry compote or not
very easy and so damn delicious
