You can use chicken if you want or any of the stock of the meats you mentioned and just use that to make the soup. Some veggies would be turnips, carrots, leeks, perhaps a little corn or a handful of pasta too . I sometimes add a small spoonful of quaker oats, now that makes it delicious!! Served with french bread. I make several variations. If I make it with meat, I choose different types of veggies as certain veggies can especially complement the taste of a particular meat. For example Okra, green string beans and eggplant ( just a few) go particular well with lamb and bring out it's taste, while leeks go great with chicken, and zucchini goes great with a light fish soup.

Paneer'n Vegetable Soup
Ingredients
1 cup cubed Paneer
5 Tomatoes chopped finely.
1 table spoon Ginger -Garlic paste
1 tablespoon Maida
2 tablespoon oil
2 cup Tomato Sauce
1 cup mixed (Potato, Beans, Cabbage, Cauliflower, Peas) vegetables chopped finely
1/2 teaspoon Garam Masala Powder
1/2 teaspoon Chilli Powder
1/4 teaspoon Turmeric Powder
Salt to taste
Cut Coriander leaves and Pudina.
Method
Cube the paneer and fry in oil.
In the same oil fry the onion and add the maida.
Fry the maida till it is brown in colour. Add the tomato, garlic-ginger paste, chilli powder, turmeric powder and the the garam masala powder. Add 3 cups of water and simmer for 15 minutes. Cool this for a few minutes and transfer to a blender and process it for a minute. Strain this.
Now add the vegetables to the strained liquid and simmer till the vegetables are cooked and soft.
Add the tomato sauce and mix well. Add the fried paneer to this and mix just before use.
Garnish with coriander leaves or pudina or a combination of both.

The best vegetable soups are ones that are made from whatever is in your fridge. Onion, carrot, and celery are a great thing to put in, but pieces of tomato and grains like barley and bulgur perform really well in soup, too. Cut them into small pieces and saute them until they are halfway done, and then put them in a large pot with some chicken or vegetable stock. Do not use base or boullion, because they make everything salty and disgusting.

If you are making vegetable soup, that means no meat. Otherwise it's beef vegetable, or chicken vegetable.
Use tomato juice or vegetable juice as a base. Add chopped carrots, celery, brocoli, peas, corn, mushrooms, zuchini or beans. Basically, add whatever vegetables you like and leave out the ones you don't. If it's getting too thick, add more juice or water. If it's too thin, add more veggies.

Minestroni! Does not require meat, but you can really kick it up a notch if you add two teaspoonsful of beef bullion crystals per quart of soup. The Good Housekeeping Illustrated Cookbook is where I got my minestroni recipe - and I'm careful to use all FRESH ingredients - except I do use canned cannelini beans and red beans. Serve this soup with fresh hot cornbread! Oh yeah, babe! Stick-to-your-ribs good!

If I am making veggie soup then I use either store bought chicken broth or left-over chicken broth. To that I will add carrots thinly sliced, potatoes thinly sliced, celery sliced and thinly sliced zucchini. I cook them until all veggies are tender then right before I take it off I add a handful of freshly washed cilantro(coriander) roughly chopped. Also it's a good time to add salt or pepper if it needs it. I usually make this when I am sick or my husband is sick. Good luck!

if you are making a vegetable soup you will obviously won`t put non veg but you can put a lots of green vegetables like spinach ,potato, carrot , cabbage , green onion & tomatoes
