Fried Chinese Rice

Very quick easy dish to make.



4-6 servings 50 min 20 min prep
Change to: servings US Metric
1 cup uncooked rice
5 teaspoons butter
1 cup chopped onions
1 cup chopped carrots
2/3 cup chopped scallions
3 teaspoons sesame seeds
5 eggs
5 teaspoons soy sauce
1/2 teaspoon salt
1/4 teaspoon pepper


Cook rice according to package directions. In a large skillet melt butter.
Add onions, carrots and scallions. Saute until carrots are translucent.
Set aside. Heat oven to 350 degrees. Place sesame seeds in a shallow pan.
Bake until golden brown (10 to 15 minutes), shaking pan occasionally for.

Indian Chinese Fried Rice:
1/2 pack of mixed peas
1 cup egg omelette coarsely shredded (use 4 eggs)
1 large red onion diced
1 tablespoon curry powder
1 teaspoon turmeric powder
1 cup bacon coarsely chopped (or shredded leftover chicken meat)
5 cups cooked rice (preferably cooked the day before and left overnight in fridge, use 2.5 cups uncooked rice)
Salt & sugar to taste
Spring onions & corinder diced coursely to garnish.

Stir fry everything until well mixed & cooked then serve.

:: Chinese Fried Rice Recipe ::

Ingredients:

3/4 cup finely chopped onions
2 1/2 tablespoons oil
1 egg, lightly beaten
3 drops soy sauce
3 drops sesame oil
8 ounces cooked lean boneless pork or chickens, chopped
1/2 cup finely chopped carrots (very small)
1/2 cup frozen peas, thawed
4 cups cold cooked rice, grains separated (preferably medium grain)
4 green onions, chopped
2 cups bean sprouts
2 tablespoons light soy sauce

Direction:

1- Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.

2- Allow wok to cool slightly.

3- Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.

4- Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces.

5- Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes.

6- Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes.

7- Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve.

8- Set out additional soy sauce on the table, if desired.

Ingredients:

2 cups cooked basmati rice
500 g mixed vegetables (you choose from green beans, peas, sweet peppers, mushrooms, or anything else you fancy in fried ric)
1/2 teaspoon salt
1/2 teaspoon chili powder
1/2 teaspoon cinnamon
1/2 teaspoon garam masala
3 teaspoons ghee
8-10 cloves garlic, minced
1/4 cup cashews

Direction:

1- Cut all the vegetables into long pieces.

2- Pour the ghee in the frying pan and add the garlic and cashews, stiring until slightly browned.

3- Add the vegetables and fry until they are fully cooked.

4- Add the spices, adjusting to your taste.

5- Add rice, stirring well to coat with the spices, and fry until heated through and well mixed.
