Apple butter

5 lbs apples, peeled cored and cut into eighths
1 cup apple cider or juice
2 cups lemon juice
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/8 tsp ground nutmeg
Sugar (measure apple pulp, for every 1 cup of pulp you will need 1/2 cup sugar)

In a 8 quart sauce pan, combine cider apples and lemon juice. Bring to a boil and cook for thirty minutes, stirring occasionally. Puree the apple mix, and then add the spices. Simmer for 35 minutes over a low heat until very think. You must stir constantly.

After it has thickened, measure the pulp to see how much sugar will be needed. Return the pulp only to the sauce pan, and bring it back to a boil. Add sugar and remove from heat.

Try baking the apples - Cut the core out, but not all the way to the bottom. In the hole, put butter/margarine, brown sugar, and cinnamon. Bake until bubbly and the edges are slightly curled in. This is really good, especially hot with some vanilla ice cream on top!

You got a ceramic or glass bowl? Peel your apples and chop 'em into the bowl. Add a tablespoonful of brown sugar per apple, a quarter teaspoonful of cinnamon per apple, and sprinkle an eight of a teaspoonful of ground cloves over all. Then take and crush up about a dozen graham crackers and dump 'em on top of the apples. Pour about two tablespoonsful of melted butter or margerine on top of the graham crackers, carefully sprinkle a quarter teaspoonful of ground nutmeg evenly over the graham crackers. Now pop this in the oven at 350 degrees for about 35 minutes. Remove from oven, allow to cool for about 15 minutes, then scoop into individual serving dishes. To really kick it up a notch, put a scoop of French Vanilla ice cream on top of that, and about a tablespoonful of whipped cream and a maraschino cherry, and finally, hit it *BAM* with a dusting of cocoa powder.
Hey, modify this dish as suits you - that's what cooking is supposed to be, an adventure! Just ask me pal Emeril!

Poached apples, baked apple pocket pies (kind of like pie but baked on a cookie sheet), slice them up and put them in a fruit salad, go bobbing for apples with your kids (assuming you have some), completely cover the apple surface in cloves (pierce the skin with cloves) then hang them to dry in a window- when their done you'll have a wonderful natural air freshner. Slice them up and put them in lunches, make chicken salad. Make that white fluffy salad that has marshmellows, apples and grapes in it... It's at like every picnic I've ever been to but I don't know what it's called! Use your Kitchenaide Mixer (assuming you have the grinding attachment) and grind them into apple sauce. Use the apple sauce to make apple spice cookies.... Use a food processor and grind them up to make apple juice, buy some milling spices and turn it into cider... Apples are a very versitalle food!

Have fun!

Something I did recently was simple and more importantly yummy! Since up some apples, melt a couple sticks of butter, add some cinnamon, pinch of salt, brown sugar and some vanilla. Heat it all up. Gets warm and gooey. Put it in a bowl and top with some vanilla ice cream. Works well with peaches too.
