MACADAMIA MAHI MAHI WITH PINEAPPLE
PINK PEPPERCORN CHUTNEY

5 (6-9 oz.) MAHI MAHI fillets
8 oz. macadamia nuts
2 tsp. olive oil
Cornstarch Mix (50% cornstarch 50% water mix until smooth)
1 fresh pineapple
1 c. pineapple juice
3 tbsp. pink peppercorns (whole)

Chop nuts in food processor or blender.
Lightly salt each side of fillets and coat both sides with nuts. Place olive oil in cold saute pan, add fillets. Turn flame on medium and cook fillets until nuts are lightly brown. Turn fillets over and cook until lightly brown. Remove from pan and place in 375 degree oven. Remove when fish is firm to touch.

Chutney: Clean and finely dice 1/2 of the pineapple. Crush the peppercorns. Add the pineapple juice and pineapple to a sauce pot and bring to a boil. Reduce to a simmer, add the peppercorns and whisk in the cornstarch mix to thicken. Pour over fillets and serve.

Ginger glazed mahi mahi

INGREDIENTS
3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1 teaspoon grated fresh ginger root
1 clove garlic, crushed or to taste
2 teaspoons olive oil
4 (6 ounce) mahi mahi fillets
salt and pepper to taste
1 tablespoon vegetable oil
DIRECTIONS
In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil. Season fish fillets with salt and pepper, and place them into the dish. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.
Heat vegetable oil in a large skillet over medium-high heat. Remove fish from the dish, and reserve marinade. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork. Remove fillets to a serving platter and keep warm.
Pour reserved marinade into the skillet, and heat over medium heat until the mixture reduces to a glaze consistently. Spoon glaze over fish, and serve immediately.

I have a very easy recipe - place the fillets on aluminum foil in a flat pan with a tab of butter under each. Squeeze lemon then pour some Italian salad dressing and honey dijon dressing on each fillet (I use wishbone) sprinkle dill and bake for about 12 minutes depending on how thick the fillets are. Tastes delicious!!!

I like to marinate in Italian dressing for an hour or so and chop up garlic and onions. When done place on a plate of aluminum foil and pour marinade over and top with onions and garlic. wrap up and bake for 20 mins
It's also very good on Salmon

first things first fire up the grill
i live in a low rent apartment in a college town so i cook cheap quick and delicious
soak the fish in red wine and lemon juice
rub(lightly now we're dealing with highly delicious and expensive fish here baby c'mon) cracked pepper onto fish
here's were it get's crazy
blacken the fish on the grill and put a little jack daniels on it as it grills

it's great with a side salad and some bread

Very simple. Marinate and cook in pinapple and orange juice. its so good. Tasted like candy. This works with many different types of fish.
