I like to watch the food network challenges especially the cake ones and I was wondering if anybody knows what that special type of sugar they use is called

Sugar? Do you mean for the frosting? There are several different types of frosting they use. The one on this past weekend also was a candy challenge along with a cake they had to decorate with candy so maybe it is something they were using for that? Fondant if probably the most popular frosting or covering they use and they shape things out of it. Also they use Marzipan, which you can buy at the grocery store.

They sometimes use fondant for icing. You can buy it in a box at Walmart or a craft store. You roll it out (kind of like play dough consistency) and then place it on your cake. You can even get fondant cutters to make fondant shapes to decorate your cake with.
