Salmon is awesome and holds together well. Marinate it with whatever marinade you prefer.

Lemon pepper is always good.
Lawry's seasoning salt.
Mrs. Dash (all varieties)
Garlic salt or garlic powder
Old Bay seasoning
Bay leaf
Get creative, use seasonings that YOU like. Take a trip down the spice isle at you local grocery store. You can even ask the guy at the fish market, he could tell you what will taste good on it. Try different marinades or if you like fried fish, try different breadings and batters. On occassion, put a fish on the grill with some herbs and spices. Baked fish is good also. You have so many seasonings to choose from. I personally LOVE fried catfish fillets and fried perch fillets.

I love fish...I mean I'm crazy about sea food...What I have to say to you have to try it yourself to find out what would be a good tasting fish meaning try using spices you like...for example I love garlic so yes I do use garlic... But here's one that I really like it:
Blackened Seasoning for Fish
INGREDIENTS:
2 teaspoons ground paprika
4 teaspoons dried leaf thyme
2 teaspoons onion powder
2 teaspoons garlic powder
1 tablespoon granulated sugar
2 teaspoons salt
2 teaspoons black pepper
1 teaspoon ground cayenne pepper, or to your taste
1 teaspoon dried leaf oregano
3/4 teaspoon ground cumin
1/2 teaspoon ground nutmeg
PREPARATION:
Place all ingredients in a jar and store in a cool dark place. Shake jar well before each use.
Over low heat, melt about 3 tablespoon of butter in a nonstick skillet (enough butter to cover fish and the bottom of the pan).
As soon as the butter is melted, place the fish in the pan, flipping it over to cover both sides with butter. Then generously coat the fish with the seasoning, flip over again and coat the other side with seasoning.
Now turn up the heat to medium-high and cook on one side until blackened and somewhat crispy. Flip over and cook the other side. Add a little more butter whenever necessary.
Enjoy it!

For the seasoning i use Old Bay seasoning for seafood. I also love to use with it Meterainian Oregano. salt pepper, Ginger.On the side of the spice jars they have written what the spice is good to use on. For fish, Red Snapper, Cod, Salmon,Red perch, and Trout. Make sure the fish you buy is fresh if it has a fishy smell do not buy it. It should smell like the ocean,

I love Tialpia, but I also love Salmon. Tialpia is very mild fish and you can season it anyway you want and it will taste good. I like grilling fish or just cooking it in a skillet and adding lemon juice, butter, salt and pepper to taste to season it.

I like salmon in the rotisserie, pepper,season salt, garlic powder, cayenne pepper, or one of those marinate sauce. Fried is always good but season your corn meal just like you should season you flour as well as the meat or fish.Salmon croquette A can of salmon, onion, egg,and crackers enough to soak up the juices so about nine or ten crackers then patty it like a burger flour it make sure you season both salmon mix and flour and fry it until brown don't need much grease. And then you can always find new recipes on-line at food TV or punch in fish recipes at google.

Salmon is an awesome fish. Good for you and good tasting. Marinate it in a bottle of italian dressing. The longer the better. oVernight would be best. You can grill it, skin side down first and it is so yummo!
White fish or even salmon is also very good marinated in and cooked in a mixture of pinapple and orange juice. It comes out so good!

My dad always makes Walleye (the ones he catches) with blackened seasoning. I'm sure it would work great with Perch too.
He cuts it into small fillets, washes them, and then sprinkles the seasoning on the fish.
Usually over the grill he heats a cast-iron skillet, and puts some butter in it.
When the butter is hot, and bubbling he adds in the fish fillets and cooks them until they are done!
Yum!
P.S. Blackened seasoning is slightly spicy, so don't put it on too heavy if you decide to try this!

A good tasting, mild fish is Halibut. It's super easy to cook w/, too, whether you're baking it in the oven or Grilling it.
I'd suggest baking it @ 350 for about 20-25 min. with FRESH lemon juice, melted butter, chopped garlic & some breadcrumbs.

just a touch of lemon or lemon pepper, different herbs, sea salt and there is a spice for fish out there. Good tasting fish - white fish as in haddock, sole etc are excellent and are nice fried up in a bit of butter. You can roll in flour for a little bit of a crust and sometimes even a tad of garlic salt is tastey

One of the easiest recipes I have made and had raves about it is.
Use Jiffy Corn Bread Mix and 1 egg, dip the fish in the corn bread mix and then in the egg and back in the corn bread mix. You can either fry it till it is golden brown or bake it in the oven at 325* for about 45 mins. or til done.
You don't need any other ingredients. But it has to be JIFFY brand, the others don't taste as good.
