RASPBERRY PUREE

1 tb Kirsch or other
Cherry-flavoured brandy

Rub the raspberries with the back of a large spoon

This is easy and good.

1 half-pint package fresh raspberries
1/2 cup granulated sugar
1/4 cup water
1 cup (12 ounces) seedless raspberry jam
1 tablespoon Framboise liqueur

Place the package of raspberries, the granulated sugar, and 1/4 cup water in a small saucepan. Bring to a boil, lower the heat, and simmer for 4 minutes. Pour the cooked raspberries, the jam, and Framboise into the bowl of a food processor fitted with the steel blade and process until smooth. Chill.

take some raspberries, put in a blender and puree. strain through cheese cloth and add sugar and lemon juice to taste. don't make things harder than they need to be and take some time to proof read before clicking the submit link.
