I think the problem is that I have a Lexmark that uses the #1 cartridge only. I can't find an option that will let me choose black and white

Every printer is different. Somewhere in your "page setup" or options when printing there is a selection to print in black and white. This works for all color documents and not specifically PDF.

When you go to print, check in your "Printer Preferences". There might be an option for "black and white" only , or using the black cartridge only.

Select the option to print. When the print screen comes up go to options and choose B&W print.

when you print your document, look at the print dialog box and check 'black and white' that will over ride what colours are defaults in your adobe document.
