it is illegal and unislamic to observe eid (or any other islamic month) without seeing the moon... committes are therefore formed in many countries for moon sighting that declare the start of islamic months and special occassions like eid

No. It depends on the sight of the moon. And time zones are different. Also, not all on this earth can see the moon on the same day. Depending on all these, it's not possible to have Eid on the same day. But still, look at Eid in USA this year, most Muslims celebrated Eid on October 24. Only a minority did on 25th. I think with time, we are getting more and more united.

What is wrong with the way they celebrate it? Why should it be on only one day?

time zones are different
so it is a certain time in the east and different in the west
actually i feel this makes for a more disciplined religion when all are celibrating together despite time zones

"On the first day of Christmas my true love gave to me..."
Extended holidays are cool. The word holiday comes from "Holy day". I wish every day was a holiday.
