Does anyone know of an easy recipe for a blueberry cheesecake? I have the cream cheese,blueberry filling, and the pie shell. My question is.... What else do I add to make the cheesecake? I have never made one from scratch before. I have only done the ones you buy in the box made by JELL-O. I would like to surprise my little 7 year old daughter with it for dessert after supper tonight.

Aw, what a nice mom! I personally prefer the Jell-O ones but i'm not much of a cook.

Anyway, allrecipes.com has a ton of blueberry cheesecake recipes. This is a good website because the users rate the recipes, so if it's really popular you know you probably won't be wasting your time and ingredients.

You can easily top the cheescake with the topping when you are ready to serve. That is so sweet to make that for your daughter.

Fluffy Two Step Cheesecake I

INGREDIENTS
1 (8 ounce) package cream cheese
1/3 cup white sugar
1 (8 ounce) container frozen whipped topping, thawed
1 (9 inch) prepared graham cracker crust
DIRECTIONS
In a large bowl beat together the cream cheese and sugar until smooth. Gently fold in the whipped topping. Spoon into the prepared crust. Refrigerate 3 hours, or until set.

Blueberry and Banana Cream Cheese Pie

INGREDIENTS
1/2 cup chopped pecans
3 ripe bananas
1 (16 ounce) package frozen whipped topping, thawed
1 (8 ounce) package cream cheese
1 (21 ounce) can blueberry pie filling
1 cup white sugar
1 recipe pastry for a 9 inch single crust pie
DIRECTIONS
Press pecans into unbaked pie shells. Bake at 350 degrees F (175 degrees C) until light brown.
Slice bananas into cooled crusts.
Cream sugar and cream cheese together. Add nondairy whipped topping to cream cheese mixture. Pour mixture over bananas in both pie pans.
Top pies with blueberries. Chill at least 4 hours before serving, or freeze for later use. Enjoy!

1/2 c. sugar

BLUEBERRY TOPPING:

1 c. water
2 tbsp. cornstarch (+ 2 tbsp. water)
1 tbsp. lemon juice

In a small bowl, blend cream cheese, eggs, vanilla and sugar well. Turn into crust. Bake at 350 degrees for 35 minutes.
Blueberry topping: Combine blueberries with sugar and water. Bring to a boil. Soften cornstarch in 2 tbsp. water. Slowly add paste to berries. Simmer about 15 minutes. Add lemon juice. Spoon warm glaze over cooked cheesecake. Refrigerate

1/2 cup butter, melted
1 (8 ounce) package cream cheese
1/4 cup milk
2 tablespoons confectioners' sugar
1 (21 ounce) can blueberry pie filling
1 cup heavy whipping cream
3 tablespoons white sugar
1 teaspoon vanilla extract
DIRECTIONS
In a small bowl, stir together the graham cracker crumbs and butter. Set aside 1/2 cup for topping, and press the rest of the crumbs into the bottom of a 7x11 inch baking pan. Set aside to chill in the refrigerator.
In a small bowl, beat the cream cheese, sugar and milk until smooth. Spread evenly over the chilled crumb layer. Spread the pie filling over the cream cheese layer, and chill while preparing the whipped cream. In a chilled bowl, whip the heavy cream, sugar and vanilla until stiff, spread over the top of the blueberry layer. Sprinkle the top with the remaining graham cracker crumb mixture and keep chilled until serving time.

Wellllll.....making a cheesecake is not just ...poof!....you mujst have the proper tools or you will botch it ....and thus will come out worse than a "box mix".

there are many different kinds of Cheesecake,,,,my favorite is New York Style...it is VERY dense and VERY rich(not for everybody.

But like I said you need the tools...food processor(save ALOT on the arm)....Spring form Pans(a must)....a zester(most folks don't know that fresh lemon zest is kinda a must for good cheesecake)

You can search the web for recipies..but most are not that good in comparison to the "real" deal.

2 packages cream cheese - 8oz. each -- softened
1/2 cup sugar
1/2 teaspoon vanilla extract
2 large eggs

Bake for 40 min in the shell and chill for 2-3 hours before serving. Good Luck!
