Vodka Cream Sauce with Pasta
1 T. butter
1 T. olive oil
1 small onion
1 28 oz. can plum tomatoes, drained, seeded and chopped
1 c. whipping cream
1/4 c. vodka
1/4 tsp. dried crushed red pepper
Salt and pepper
1 lb. penne pasta
2 T. fresh basil, finely chopped
1/4 c. freshly grated parmesan cheese
Melt butter with oil in heavy sauté pan over medium heat. Add chopped onion and sauté until tender, about 8 minutes. Add tomatoes and cook until juice has almost evaporated. Stir frequently, about 25 minutes. Add cream, vodka, and red pepper. Bring to a boil and allow to thicken, about 2 minutes. Season to taste with salt and pepper. Add pasta and toss to cover. Add basil and 1 T. parmesan cheese. Divide among plates. Sprinkle with additional parmesan. Sauce can be made ahead and refrigerated. Reheat when pasta is cooked just prior to serving. Sprinkle with additional parmesan.

This is what I've used:

Quick Vodka Sauce

1 quart good quality store-bought marinara sauce, blended until smooth
1 cup vodka
1/2 cup heavy cream, at room temperature
1/2 cup grated Parmesan
1 pound pasta

Put the sauce in a blender or food processor and process until smooth. Pour the sauce into a heavy large skillet and simmer over low heat until the mixture reduces by 1/4, stirring often, about 20 minutes. Stir the cream into the tomato and vodka sauce. Simmer over low heat until the sauce is heated through. Stir in the Parmesan cheese until melted and well blended. Serve over hot pasta.

You can also use your own homemade sauce, but store bought sauce makes it a quick, 30 minute supper.

VODKA SAUCE

1/4 cup onions choped
1 large can whole peeled tomatoes
1 pint heavy cream
1/2 cup vodka
salt and pepper to taste

In a sauce pan, add oil, butter onions and garlic. Saute until onions are clear.

Add vodka, tomatoes and parsley. Slowly mix in the cream.

Salt and pepper to taste, add pasta, sprinkle with Parmesan cheese and serve.

1 large sweet onion, chopped
5 cloves garlic, coarsly chopped
3 tablespoons extra virgin olive oil
2 (28 ounce) cans crushed tomatoes
1 1/4 cups vodka, premium quality,will make a diffrence
2 cups heavy cream
4 tablespoons fresh basil, finely chopped
1 (5 1/2 ounce) can tomato paste

saute onion, garlic, and olive oil in large sauce pot untill translucent, do NOT overcook or brown.
add 2 cans of crushed tomatoes, and vodka.
cook about 1/2 hour or untill all alchohol has burned off.
add heavy cream and basil.
add tomatoe paste to your descretion, although sauce should be of a thick consistency, some people like theirs thin.
Let saute about 1/2 hour.
Seve with penne and freshly grated parmesan cheese.

Here's the recipe I use for Penne ala Vodka, so you can just eliminate the pasta...
1 tablespoon extra-virgin olive oil, once around the pan in a slow stream
1 tablespoon butter
2 cloves garlic, minced
2 shallots, minced
1 cup vodka
1 cup chicken stock
1 can crushed tomatoes (32 ounces)
Coarse salt and pepper
16 ounces pasta, such as penne rigate
1/2 cup heavy cream
20 leaves fresh basil, shredded or torn
Crusty bread, for passing


Heat a large skillet over moderate heat. Add oil, butter, garlic, and shallots. Gently saute shallots for 3 to 5 minutes to develop their sweetness. Add vodka to the pan, 3 turns around the pan in a steady stream will equal about 1 cup. Reduce vodka by half, this will take 2 or 3 minutes. Add chicken stock, tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper.
While sauce simmers, cook pasta in salted boiling water until cooked to al dente (with a bite to it). While pasta cooks, prepare your salad or other side dishes.

Stir cream into sauce. When sauce returns to a bubble, remove it from heat. Drain pasta. Toss hot pasta with sauce and basil leaves. Pass pasta with crusty bread.

Just adding this tip, because the other answers are good: Don't add salt to any of the recipes even if you might taste and feel it needs it. I made a vodka sauce the other day for clients and did so, and it became too salty after it simmered for a while.

Add tomatoes and cook until almost no liquid remains in pan, stirring frequently, about 25 minutes. Add cream, vodka, and red pepper and boil until thickened to sauce consistency, about 2 minutes. Season to taste with salt and pepper.

Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally to prevent sticking. Drain well. Transfer to large bowl. Bring sauce to simmer. Pour over pasta and toss well. Sprinkle with parmesan cheese.

1/2 cup grated Parmesan cheese

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Meanwhile, melt butter or margarine in a large skillet over medium heat. Add pancetta, and saute until lightly browned. Add vodka and stir until it is reduced by half, about 4 to 5 minutes. Stir in tomato sauce and cream. Simmer uncovered for 10 to 12 minutes. Stir every few minutes.
Stir in pasta, and heat through. Serve with Parmesan cheese.

Penne with Spicy Vodka Tomato Cream Sauce

INGREDIENTS
1 pound uncooked penne pasta
1/4 cup extra virgin olive oil
4 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes
1 (28 ounce) can crushed tomatoes
3/4 teaspoon salt
2 tablespoons vodka
1/2 cup heavy whipping cream
1/4 cup chopped fresh parsley
2 (3.5 ounce) links sweet Italian sausage
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
In large skillet, heat oil over moderate heat. Remove casing from sausage and add to skillet. Cook, breaking up the meat, until brown. Add garlic and red pepper and cook, stirring until garlic is golden brown.
Add tomatoes and salt; bring to boil. Reduce heat and simmer 15 minutes.
Add vodka and cream and bring to boil. Reduce heat to low and add pasta, toss for 1 minute. Stir in fresh parsley and serve!

INGREDIENTS
1 tablespoon butter
1 tablespoon olive oil
1 onion, chopped
1 (28 ounce) can canned peeled and diced tomatoes
1 cup heavy whipping cream
1/4 cup vodka
1/4 teaspoon crushed red pepper flakes

1 pound penne pasta
2 tablespoons grated Parmesan cheese

In a large skillet over medium heat, melt better with oil; add onion and saute for 8 minutes or until transparent.
Add tomatoes and cook for 25 minutes or until almost no liquid remains in skillet; stir frequently.
Increase heat and add cream, vodka and red pepper flakes; boil for 2 minutes or until thickened to sauce consistency. Season to taste with salt and pepper.
Bring a large pot of lightly salted water to a boil. Add penne and cook for 8 to 10 minutes or until al dente; drain and transfer to a large bowl.
Bring sauce to a simmer and pour over pasta; toss to coat. Sprinkle with Parmesan cheese; serve.
