I'd like to make use of skills in the outdoors and such. Not so much manual labor. I've worked as a bartender and am from the US. How hard is it to work legally?? Or is it a real issue to work illegally??

If you are 30 or under, go here to get a 6-month work visa and work wherever you want.

Tourism is a major industry and there are pubs & clubs everywhere, so you could probably get work under the table. But, if you can do it legally, your pay will be better and why take chances. Not everyone is as Lax about immigration & deportation as the US.

Working Holiday Eligibility Requirement
The requirements for obtaining a Working Holiday visa are different for each country and so for the exact requirements for your scheme please see NZ Immigration Working Holiday Section . In general the following requirements apply to the visa:

Be aged between 18-30
Be able to show you have sufficient funds to support yourself (approx $4200 in cash, travellers cheques, bank draft or bank statement)
Have a return ticket or evidence of funds to purchase one
Have no dependent children with you
Never been on a Working Holiday to New Zealand before
Main reason you're coming to NZ is to holiday not work
Evidence you hold adequate medical insurance for time spending in NZ

BTW Holmegirl - I am still anal about my coffee and haven't had a decent one in 18mths in the UK so I'd love to know when the european standards are going to reach here?

try something called wwoofing look at wwoof.com. it basically means you work for a few hours a day in return for your food and accomadation, normally on farms and outside kind of places.
For bar work you'd really have to go to one of the bigger cities like wellington, auckland , christcurch or dunedin. But be prepared, they are particuarly anal about thier coffees, even if they are rubbish by european standards. It's an awesome country though, you'll have a wicked time
