1 lb. Scallops, cut in half
1 oz Sherry, optional
6 Tbsp Butter, melted
1/2 cup dry Bread Crumbs

Arrange scallops in shallow buttered casserole dish. Sprinkle with sherry. Pour half the butter over scallops. Cover with bread crumbs. Pour rest of butter over bread crumbs. Bake at 375 for 15 minutes. Serve scallops hot!

Well scallops are probably better if you just saute them in butter or olive oil. You want to brown them by high heat on top and bottom. If you have some really fat ocean scallops, when they get browned, you can add a bit of white wine, some garlic, salt, pepper and some fresh lemon juice. Scallops have a very sweet flesh and they need some acid to cut the sweetness. After you brown them, cover them and simmer for a few minutes, not very long because you do not want to overcook them.

You can as well cover them and put them in the oven and cook on about 400 for about 12 minutes.

If you want a really fancy dish, take the cooked scallops out of the pan; you can add a bit of heavy cream at the end of the cooking turn on high heat and stir, it thickens quickly. You can then spoon the sauce over the scallops on the plate or put the sauce on the plate and put the scallops on top of the sauce. Garnish with some chopped parsley, dill or tarragon. If you want a somewhat spicy dish add some Zatarain's spice. Delicious!

If you want a very special dish as some saffron threads to the liquid in the pan.

1 1/2 pounds bay scallops, rinsed and drained
1/2 cup seasoned dry bread crumbs
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon dried parsley
3 cloves garlic, minced
1/4 cup grated Parmesan cheese
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Pour melted butter into a 2 quart oval casserole dish. Distribute butter and scallops evenly inside the dish.
Combine the bread crumbs, onion powder, garlic powder, paprika, parsley, minced garlic and Parmesan cheese. Sprinkle this mixture over the scallops.
Bake in pre-heated oven until scallops are firm, about 20 minutes.

BAKED SCALLOPS

1 lb. scallops
3 to 4 slices of bread
1/4 stick of butter
1/4 c. wine
Chives

Toast bread slightly; just enough to dry out. Put in blender to make crumbs. Melt 1/2 stick butter and 1/4 cup wine and tiny bits of chives. Mix together.

Bake in a shallow baking dish at 400 degrees for 20 minutes.

If the scallops are baked then you only need to reheat them. You could use a Microwave, Or put them in the oven to reheat them
