DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jellyroll pan.
In a large bowl, beat eggs and sugar with an electric mixer on high speed for five minutes. Gradually mix in pumpkin and lemon juice. Combine the flour, baking powder, salt, cinnamon, and ginger; stir into the pumpkin mixture. Spread batter evenly into the prepared pan. Sprinkle pecans over the top of the batter.
Bake for 12 to 15 minutes, or until the center springs back when touched. Loosen edges with a knife. Turn out on two dishtowels that have been dusted with confectioners' sugar. Roll up cake using towels, and let cool for about 20 minutes.

3 eggs
1 C sugar
2/3 cup pumpkin (not pie filling)
1 t lemon juice
3/4 C flour
1 t baking powder
2 t cinamon
1 t ginger
1/2 t nutmeg

Beat eggs on high for 5 minutes. Gradually beat in sugar. STIR in pumpkin and lemon juice. Add in rest of ingredients and mix.

Spread it on greased and floured 15"by10"by1" pan. Add one cup nuts if desired.

Bake at 375 F for 15 minutes.

Take a towel sprinkled with powdered sugar and roll up cake in the towel and let cool rolled up.

For frosting:
1 C powdered sugar
6 oz cream cheese
1/2 t vanilla
4 T butter

Mix frosting and spread on opened cake roll. Reroll and serve.

No, but I have a great recipe for Pumpkin Cream for the filling.
It's easy and nutricous.
Pumpkin Filling:
1 (16oz) can of Libby's Pumpkin
1/4 c powdered sugar
1/2 tsp vanilla
1 + 1/2 (8 oz) containers cool whip
Mix well.
(We use fat free cool whip. It tastes exactly like the regular)
